We used to buy frozen fried rice at the store and eat it on days when I didn’t feel like cooking, usually reserved for the weekends. I never liked the long list of ingredients and the junk they put in there, but it was just soooo good. One day, I inherited a large box of rice from a work lunch where Qdoba was served. The rice was a bit stale and not so great after a few days, so I decided to try to make my own fried rice to breathe new life into it. It worked out perfectly, and the end result was also perfect for freezing, so I always made large portions and froze it in individual packets to give us the same unfreeze-and-heat convenience, but without the nasty additives. I saw a recipe once of pizza pockets, but they were made with just pepperoni and cheese, which I don’t like. So I decided to make my own pizza pockets (also called calzones), but with better ingredients. I used wheat flour for the dough and spruced up the insides. This cheesy rice came into existence after I inherited some white queso that my mom didn’t know what to do with. I never cooked with queso before either, so I had no idea how it would turn out, but it seemed like the best pairing would be rice. I came up with this during my first attempt to make risotto. I read that it has to be simmered slowly in a shallow pan, adding liquid every so often and stirring, so that was the basis of this dish. My favorite breakfast food on the weekends is scrambled eggs, but not the kind with bacon and sausage that you might get at a restaurant.
